Christmas pictures

Well, I'm trying to upload the christmas pictures of Dominic, and it is not working. I really wish they would because he looks sooo adorable.

I did Mad Dash shopping yesterday and got most of my gifts bought. I only need a gift for my FIL and stocking stuffers for my mom and stepdad. I would love to have it all done today but I really don't want to go out into the rain. It is so wet out there and I don't feel like driving and having to pull D in and out of the car in this steady down pour, so maybe I should just stay home today and bake cookies and finish my cards. No, I never did send out my cards. I had great plans to stamp and make my own cards this year, but it never happened. Bah Humbug.

Then again, the Dollar Store always calls my name, so who knows, maybe just a quick trip out?

Less than one week until my surgery. Still nervous and happy. The way the doctor discribed it, I will only be in the hospital for about three hours. That's pretty good, I thought I'd be there all day.

Well, I better get off here, I hear the little one getting into stuff!

LAWL Recipe 1: Stuffed Flank Steak

I made this last night for dinner:



It's from the LA Lite Cookbook. It is flank steak stuffed with mushrooms and then you thicken up the juices for a gravy. I paired it with mashed potatoes (for the guys) and broccoli (and I had brussel sprouts, too). I had my doubts when I first started it because it smelled sweet and we hate sweet meat here at my house. But, it turned out very good. The down side: It shrinks up when you cook it, and dried out a bit. You have to remember I'm not the worlds best cook and tend to freak out a little about undercooked meat. Other than that, I would make this meal again:

Stuffed Flank Steak
1 protein, 1 veggie

3.5 or 5.5 oz beef flank steak (according to plan)
1 cup fresh mushrooms, sliced
1 c Herbox very low sodium beef broth
1 tablespoon low sodium Worcestershire sauce (I used regular sodium)
1 tbsp snipped fresh parsley (I didn't have any)
1 tbsp cornstarch
1 tbsp water

-Score flank steak by making shallow cuts diagonally across the steak in a diamond pattern.

-Pound steak with a mallet into a rectangle.

-Spread mushrooms on top of steak. Roll up meat, starting from one short side. Secure with string or wooden skewers.

-Spray skillet (I used a covered Dutch oven type pot) with Pam. Brown the steak roll on all sides. Add beef broth and orchestrating sauce. Cover and simmer for 45-60 minutes or until meat is tender, turning occasionally.

-When meat is done cooking, remove from skillet and keep warm.

-Combine cornstarch, parsley and water. Add to liquid in skillet. Cook and stir until thickened.

What is there to say?

I didn't think that I had to work tonight, and surprise! Yes I do. There is only two weeks until my surgery and I only have two days off. Oh, three if you count Christmas day. Great, I wanted to get so much done.

Sigh.

Why can't I win the lottery or something? I hate that hell hole! And it's getting worse and worse.

PS, I'm still fat as ever and it's killing me.

Holiday wish

I wish it would snow. I've never really had a white Christmas, of course since I grew up in Arizona, having a white Christmas was never an option, and now that I live in Oregon, it never seems to get quite cold enough here in the 'valley' (do they call us that because we are flat and low?) Right now it is sunny yet cold. And the sun is already lowering in the sky.

Every year I've put my tree up the weekend after Thanksgiving. For some reason this year I have been putting it off. Laziness? I don't know. I'm not in the Holiday mood this year, which I thought for sure that I would be since D is older I thought it would be more fun. But, I'm not sure that he totally understands 'Christmas' yet and the tree would be one more thing that he could just destroy. Bla, it seems that I have a case of the Bah Humbugs. That hasn't happened for a long time.

Maybe that's what I should do right now, D is sleeping so I have some undisturbed time to unwind the lights put up some unbreakable ornaments and play some Christmas music. Maybe that will kick start the cheer!

Wednesday's Mish-Mash

I joined FatFighters blog community, but I don't know how to put the little cute button on my blog, so I added a link on the side. I'm always looking for new weight loss blogs as inspiration.

I also like SAHM blogs; it's interesting to see what other moms are doing out there. Just when I thought I lost my sanity, I see that I'm not the only one. It's very comforting.

I started writing in my LAWL journal again. Today is not starting out so good, but I'm drinking my water and just took my vitamins, so hopefully I can redeem myself.

D is being a whiney brat today. If he doesn't get his way then he cries and throws stuff. Whatever!! I never wanted a kid that did that.

By the way...Did anyone catch Nanny 911 on Monday? OMG, that mom really bothered me. The dad did too, being such a big baby and all, but the mom!!! She treated the little boy like he was some kind of demon, screaming at him "Oh my God, WHAT IS WRONG WITH YOU!!!!" I'll tell you what's wrong with him--the poor boy has assholes for parents. I wanted to go pick him up and let him stay with me. And how in the world did they get the parents to change their parenting skills just by one conversation. 45 minutes into the show they didn't want to cooperate, then all of a sudden, they've turned into the best parents ever. Hmm, sounds fishy.

I was going to go to the Dollar Store but D fell asleep. I've had this post open for most of the day, I should get off the internet, we bought some wood and the wood man needs to call us back.

Here I go...

I saw the surgeon today, and after describing my hand hell he only had one question: "Do you drop things?"

All the time.

He then asked me when I wanted to schedule the first surgery!

He said that when it gets so bad that the first three fingers are constantly numb and I can't hold on to anything the only alternative is to go ahead and surgically take care of the carpal tunnel.

Hallelujah!! I thought I would have to beg and plead.

He also said the he would recommend that I do only one wrist at the time unless I had someone at home willing to take total care of me (wipe my butt, help me shower) and jokingly asked me how good my relationship with E was. I said good, but ugg! E will be off of work the week between Christmas and New Years, so I scheduled it for the 26th and he'll have the week to take care of me. Then three to four weeks later I will get the other wrist done.

I scheduled the left wrist to be done first because it is the worst one (but not that much worse), but when I thought about it I realized that I am SO right handed that maybe I should get the right hand done first, out of the way while I have E at home for a week. Then I could get my left done and E will have to take minimal time off work and I'll be able to use my right hand. Make sense?

I won't be put under, I've decided that I just want a local. That sounds crazy, I know, but it is less hassle and less money for the insurance to not pay (I worry about the out-of-pocket), less lab work, ect. I just want my hands back.

Besides, I'm pretty damn tough when it comes to pain and stuff like this. I can handle it. E thinks I'm brave :)

I've never been so happy and nervous!! Well, except the time that they were going to pull a baby from my insides, but besides that...

All right now

This weekend sucked. I was so busy at work, I had a breakdown yesterday. Finally my Team Leader showed up and understood that when I work with this certain doctor I am totally swamped. Now she believes me. Thank goodness.

Who cares about that anyway? I've taken my Sunday bath, shaved, loofa'd and lathered on some cream, my hair is blown out and looks pretty sexy (!) and I feel like it's gunna be a good week ahead!!

I'm shopping with my mom tomorrow (Monday), a coat and new shoes for D, he's growing out of the ones he has and then I have an appointment with the surgeon for my wrists. I hope that he agrees and my insurance will be kind to me.

Now off for a smoke with my honey and then some episodes of Sex and the City. (I broke down and rented it yesterday). Why are the episodes only 23 minutes long???
